I have a lot of applesauce in the house right now and had been wanted to try these muffins after seeing them in the February/March 09 Country Woman magazine. The recipe was super simple! I chose to omit a few ingredients, but the muffins turned out great. I topped them with a cinnamon and sugar mixture as well. Then I froze some to use for quick snacks and breakfasts. Here's the recipe:
Spiced Applesauce Muffins
1/2 C softened butter
1/2 C sugar
1/4 C packed brown sugar
1 egg
1 C unsweetened applesauce
1/2 tsp. vanilla extract
1-1/4 C all-purpose flour
3/4 C graham cracker crumbs
1-1/2 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. ground allspice
1/2 C chopped walnuts
1/2 C raisins
1. In a large bowl, cream butter and sugars until light and fluffy. Add egg; beat well. Stir in applesauce and vanilla.
2. Combine flour, cracker crumbs, cinnamon, baking soda, and allspice; stir into creamed mixture just until moistened. Fold in walnuts and raisins.
3. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield 1 dozen.
